Apple Crumb Muffins

These delightful muffins are easy to make, featuring a moist texture from sour cream and diced apples, and topped with a delectable crumb topping.

MAKES 12 MUFFINS

Ingredients:

For the Muffins:

  • 2 1/4 cups (10 oz.) all-purpose flour
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 cup (Two oz.) light brown sugar
  • 1 1/2 tsps. ground cinnamon
  • 1/2 tsp. salt
  • 1/2 cup (4 oz.) sour cream
  • 1 large egg
  • 8 (Eight) tablespoons (1 stick) unsalted butter, cut into small pieces
  • 1 tsp. vanilla extract
  • Two big baking apples, cored, skinned, and chopped finely
  • 1/2 cup (3.5 oz.) granulated sugar

For the Crumb Topping:

  • 1/2 cup (2.2 oz.) all-purpose flour
  • 1/4 cup (Two oz.) light brown sugar
  • 1/2 tsp. ground cinnamon
  • 1/4 tsp. salt
  • 3 (three) tablespoons unsalted butter, cut into small pieces

Instructions:

  1. Preheat the Oven:
    • Set your oven to 350°F (175°C). Lightly grease 12 standard muffin tins or line them with paper liners, and set them aside.
  2. Make the Crumb Topping:
    • Combine 1/2 cup flour, brown sugar, 1/2 tsp cinnamon, and 1/4 tsp salt in a medium-sized bowl. Add 3 tablespoons of butter and pulse with a pastry blender until crumbly. Put aside.
  3. Prepare the Muffin Batter:
    • In a large bowl, combine the remaining 1 3/4 cups flour, granulated sugar, 1 tsp. cinnamon, 1/2 tsp. salt, baking powder, and baking soda. Add the remaining 5 tablespoons of butter and use a pastry blender to mix until the mixture is crumbly.
    • In a measuring cup, whisk together the sour cream, egg, and vanilla extract. After adding this mixture to the dry ingredients, whisk just until incorporated. Fold in the diced apples gently.
  4. Assemble the Muffins:
    • Evenly distribute the batter among the muffin tins. Add 3 tablespoons of butter and pulse with a pastry blender until crumbly.
  5. Bake the Muffins:
    • Bake for 20-25 minutes, or until the tops are golden and spring back when lightly touched, and a toothpick inserted into the center comes out clean.
  6. Cool and Serve:
    • Before serving, let the muffins cool slightly. Enjoy them warm or at room temperature.
