Ingredients:
For the Muffins:
- 2 1/4 cups (10 oz.) all-purpose flour
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 cup (Two oz.) light brown sugar
- 1 1/2 tsps. ground cinnamon
- 1/2 tsp. salt
- 1/2 cup (4 oz.) sour cream
- 1 large egg
- 8 (Eight) tablespoons (1 stick) unsalted butter, cut into small pieces
- 1 tsp. vanilla extract
- Two big baking apples, cored, skinned, and chopped finely
- 1/2 cup (3.5 oz.) granulated sugar
For the Crumb Topping:
- 1/2 cup (2.2 oz.) all-purpose flour
- 1/4 cup (Two oz.) light brown sugar
- 1/2 tsp. ground cinnamon
- 1/4 tsp. salt
- 3 (three) tablespoons unsalted butter, cut into small pieces
Instructions:
- Preheat the Oven:
- Set your oven to 350°F (175°C). Lightly grease 12 standard muffin tins or line them with paper liners, and set them aside.
- Make the Crumb Topping:
- Combine 1/2 cup flour, brown sugar, 1/2 tsp cinnamon, and 1/4 tsp salt in a medium-sized bowl. Add 3 tablespoons of butter and pulse with a pastry blender until crumbly. Put aside.
- Prepare the Muffin Batter:
- In a large bowl, combine the remaining 1 3/4 cups flour, granulated sugar, 1 tsp. cinnamon, 1/2 tsp. salt, baking powder, and baking soda. Add the remaining 5 tablespoons of butter and use a pastry blender to mix until the mixture is crumbly.
- In a measuring cup, whisk together the sour cream, egg, and vanilla extract. After adding this mixture to the dry ingredients, whisk just until incorporated. Fold in the diced apples gently.
- Assemble the Muffins:
- Evenly distribute the batter among the muffin tins. Add 3 tablespoons of butter and pulse with a pastry blender until crumbly.
